These EggWins (EggWhites + Muffin) are a low carber’s morning joy. The bursting flavor from the caramelized onions, chives, and spring onions (onion family cousins) is worth waking up to.
The scents from caramelizing the onions made the house amazingly fragrant because of the rosemary.
The vibrant green color, and heat from cayenne… made this dish quite memorable. Try it!

Ingredients
- Whites from 10 eggs
- ½ cup chopped green pepper
- ¼ cup caramelized onions and rosemary
- ¼ cup spring onions
- ¼ cup chives
- 1 tsp cayenne
- 1 tsp thyme
- 2 tsp salt
- Couple spritz of PAM
Instructions
- Spray 4 ramekins with PAM.
- Mix all ingredients together until will combined.
- Pour into ramekins.
- Bake in a 350 degree oven for about 20 minutes or until eggs are no longer liquid or wobbly.
