Couple years ago, while in undergrad, I often visited my Aunty in Baltimore during the holidays. Whenever i was going back to school (i lived in the campus dorms), my Aunt will send me off with this bread, hot and fresh off the oven.
Prior to my first encounter with this bread, i had never had a sweet cake/bread made without wheat flour. The texture felt different, but it tasted great. It is so easy to make, blend, mix, and pop in the oven. I never got tired of this bread. Loved it then, still love it now.
Moist? check.
Flavorful? check.
Filling? check.
Flourless? check 🙂
The right amount of sweetness? check.
Easy to make? check check.
We had this bread for breakfast on Saturday. It was delicious!
Banana Rice Bread

Ingredients
- 1 box cream of rice or 2 cups
- 4 Tbs. brown sugar
- 4 tsp. baking powder
- 1 tsp. salt
- 2 large very ripe bananas (or 3 for extra umph)
- 2 large eggs
- 1 cup water
- 2 tbsp peak powdered milk
- ¼ cup vegetable oil
- ¼ cup melted Kerry Gold butter
Instructions
- Blend all wet ingredients and bananas in a blender until smooth
- Pour blended mixture into a bowl.
- Add all other ingredients into the bowl.
- Mix thoroughly
- Bake for about 45 mins in a 350 degree oven.
- Bread is ready when an inserted toothpick comes out clean.

I am eager to try this bread but I have no idea where to find cream of rice. Is there a substitute?
Thanks for visiting Preye. You may find Cream of Rice at major supermarkerts like shoprite, or you may substitute with ground rice. Not rice flour because rice flour is too smooth. You want ground rice that feels like bar beach sand.. a little gritty.
