My Sister kept requesting for scotch eggs this past week, and then SS gave me 4 tubers of yam. With that much yam in the house, we needed to find creative and delicious ways to enjoy them. Ozoz made some plantain egg rolls last week that inspired this recipe. Thanks Ozoz.
This snack/meal is just like scotch eggs , with yam in place of the sausage meat.
The yam blend was fluffy and stretchy. It reminded me of a memory foam pillow.
The end product was very crispy on the outside and pillowy soft inside. I added a little bit of smoked salt for the extra pow!
These rolls are best enjoyed hot. Serve them up for breakfast, at your cocktail party, for a snack or even dinner. We had them with stew 🙂

Yam + Egg Roll

Ingredients
- 6 slices of yam (about 1 inch thick)
- 2 boiled Eggs (remove shells)
- ½ of a medium onion
- 1 thai pepper
- Oil for deep frying
- 2 tsp smoked sea salt
- Water for boiling the yam
- 1 tbsp salt
Instructions
- Peel the yam, rinse, put in a pot and cover the yam completely with water.
- Add the salt into the pot of yam.
- Boil yam until soft.
- Pour away the water used to boil the yam.
- Heat oil for deep frying.
- Place onions, smoked salt and pepper in a food processor and blend.
- Then add the hot boiled yams into the peppers/onion and blend all until smooth.
- Roll about 2 tbsp of the yam blend around each egg. The yam blend should cover the egg completely.
- Wet your hands with cold water before rolling because the yam mixture is sticky.
- Drop each yam egg roll into the hot frying oil and fry until the roll is golden on all sides.
- Bring out of oil, leave to cool and enjoy.
- You will have some left over yam blend, you can roll this into balls as well and fry.
Absolutely yummmmmmmmm. But then I love all things yam.
A garri crust might add another layer of texture – remember making yam balls crusted in garri and they were awesome.
