Growing up, Sunday was “special lunch day”. We usually had rice + stew + something else for lunch. That “something else” was plantain, or coleslaw, or beans, or moinmoin, or a full blown nigerian salad that is a meal in itself, or a combination of 2 or more items.
This coleslaw is super easy to make. It is a quick pick-me-up when you have guests coming over for lunch or dinner.
Ingredients:
- 1/4 of a head medium cabbage (grated)
- 1 x-large carrot (grated)
- 3 tbsp raisins
- 2 tbsp Heinz Salad Cream
Method
- Mix all Ingredients together in a bowl
Enjoy with sunday rice 🙂
