Today i had “Sunday Rendezvous” on my mind. Do you remember the show from the 90’s in Nigeria? It used to come on every sunday around 2pm or thereabout. During the show, there used to be Parle Soda, Limca, and Goldspot commercials. Ahhh the drinks of the 90’s in Nigeria!
While reminiscing, Goldspot stuck. I started craving something citrusy with a bright orange color. Thankfully there was Sriracha, Chicken, and Caracara in the fridge (these days, CaraCara oranges have become a staple in my abode). These ingredients could work I thought.
The end product – this chicken was good! citrusy, flavorful, moist, juicy, tender, an interesting hint of ginger. Just divine!
Sometimes these kitchen experiments work.
Ingredients:
- 6 chicken thighs
- 3 tbsp sriracha
- 2 tbsp oil
- Juice from one large CaraCara orange
- Zest of one large caracara orange
- 3 tsp salt
- 2 tsp freshly grated ginger
Method
- Put all ingredients in a bowl and mix thoroughly.
- Make sure each thigh has a generous coating of the orange goodness.
- Place chicken thighs on a baking rack and cook in the oven for about 60mins or until the flesh is no longer pink.
Leave to cool and enjoy.

Those 90’s ads though! Remember Tandi Guarana. Sriracha, orange, and ginger sounds like a winning combo. I’ll try this marinade with a pork roast in planning.
