Suyarized Roast Chicken

Suya is a popular Nigerian street food. According to Madam OyaComeChop, every Nigerian has tried a form of suya at least once in their lifetime. Do we have vegetarians in Nigeria? i wonder….

Good suya is a precious foodie find here in the west, sometimes it is difficult to find well made suya, so some of us just whip it up ourselves.

This is not chicken suya, but a good amount of suya seasoning was used.

Ingredients:

  1. A whole chicken – cut into quarters
  2. 1/2 cup of Suya seasoning straight from Abuja
  3. 1 tbsp salt
  4. 2 tbsp freshly grated ginger
  5. 1/3 cup canola oil
  6. 2 tsp garlic onion powder
  7. 2 tsp hot red pepper (or more if you like it hot)

Method

  1. Mix the oil and all spices together.
  2. Rub seasoned oil all over the chicken, under the wing and underneath the skin.
  3. Place on a baking rack, and cook in the oven for about 90mins or until the skin is crispy, and the flesh is no longer pink.
  4. Serve with any carb of choice, or a salad.

  1. CHOOIIII!!!!! Me, i don’t get the “straight from Abuja” part. Why you flossing though?! Anyway, that chicken is ON FLEEK!!! Planning on making chicken for church picnic on saturday i’ll defn try this… though my suya spice is nearly finished…. was gonna make lemon grass and orange spice chicken cos i found some orange spice in tesco (really good stuff) I’ll do a mix :D.. Love this as usual! Thanks for sharin babygirl!! You rock!
