Egg + Avocado Plantain Tart

Most times the simplest dishes are the most delicious. This simple breakfast tart is no exception.

Ingredients:

  1. Flourless Plantain Pizza crust (baked)
  2. 1 Egg
  3. 3 – 4 slices ripe avocado
  4. 3 medium slices of fresh roma tomatoes
  5. 1 tbsp olive oil
  6. A pinch of salt
  7. A pinch of Ms. Dash

Method

  1. Place the tomatoes on top of the crust.
  2. Place the avocado slices at the edges – They will help keep the egg in place.
  3. Break the egg in the middle of the crust (on top of the tomatoes).
  4. Top with oil, salt, and seasoning.
  5. Bake in a 350 degree oven for about 10 mins or until eggs are cooked.
  6. Bring out and leave to cool.
  7. Enjoy with a cold drink.
