Day 3 of the Harcombe diet. I cheated!! i had a spoon of ice-cream, and few pieces of ChinChin. This struggle is real man!
I had to rise, dust off, and settle with these amazing colorful skewers for dinner.
Ingredients
- 3 large Chicken Breasts
- 3 tbsp Sesame Oil
- 3 tbsp Soy Sauce
- 4 tbsp Rice Vinegar
- 1 tbsp Black Pepper
- 1 tbsp Ground Ginger
- Oiled (use olive oil) and Salted Zucchini, Sweet Onion, Assorted bell peppers
Method
- Cut up the chicken into bite sized pieces and put in a bowl
- Add the oil, soy sauce, rice vinegar, black pepper and ginger to the chicken bowl
- Leave to marinate for about 10 minutes
- Then begin to arrange chicken and chopped veggies in presoaked bamboo skewers
- Arrange skewers on baking sheet
- Pour excess marinade on top of the skewered chicken.
- Roast in the oven for about 25mins on low heat.
- Bring out and serve with watercress.
These skewers are the perfect party starter/ appetizer, and they are great as a meal too.
