I have a confession. I love food and i have been battling with my weight for a while now. As of 2/12/15, i reached an all time high of 190lbs. Carrying all that weight on my 5’4 frame has been challenging and very frustrating.
In the effort to help myself, i started the Harcombe diet. Today is Day 2 of my Phase 1 stretch, and the food must be exciting. Do you agree? Thank you, i hear you 🙂
Anyways, so today on my dinner plate was grilled lamb, watercress, and boiled corn.
For the Lamb:
- Grass Fed Lamb Chops (for 1 large chop)
- 3 tbsp rice vinegar
- 2 tsp steak seasoning (black pepper, sea salt, red pepper flakes, garlic
Method:
- Pour rice vinegar over the lamb and let it sit for about 10 minutes.
- Heat up a grill pan, and spray PAM generously.
- Place the lamb in the hot grill plan.
- Then season the lamb (season the side facing you).
- Leave to cook for about 5-7 minutes or until grill marks are formed.
- Then flip to the seasoned side and cook for about 5 mins.
- Pour about 1/4 cup of water in the grill pan and leave to cook for about 2 mins.
- Now bring out and serve.
- Serve with boiled corn and watercress.
Verdict:
- Ultra tender, juicy, flavorful and well done lamb chop. The thing literally fell of the bone upon incisor contact.
- Fresh crispy watercress was a welcome crunch on this plate.
- The sweet and chewy corn tied it all together.
