We rang in the new year with this uber easy Cranberried-Salmon. It was divinely delicious, and garnered quite a bit of praise from party guests.
Cranberried Salmon
Cranberried Salmon

Ingredients
- 1 fillet of Salmon
- ½ cup home-made cranberry sauce (we used left overs from Nenz's thanksgiving cranberry sauce)
- ¼ cup extra virgin oil oil
- 2 tsp salt
- 1 tsp black pepper
Instructions
- Heat an oven to 450 degrees.
- Heat up the cranberry sauce in the microwave for about 1 minute.
- Bring out sauce from microwave, then pour olive oil into the sauce, and stir to combine.
- Prepare a baking sheet by covering it up with foil.
- Place the cleaned salmon fillet on the covered baking sheet.
- Sprinkle the salt over the salmon.
- Use a pastry brush to brush the cranberry mixture atop the salmon.
- Sprinkle the black pepper atop the salmon and then place fish into the oven.
- Cook in the oven for about 12 - 20 mins.
- Serve.
Unfortunately it was gone as soon as it came out of the oven, and so we could not capture “after” pictures. Hopefully these “before” pictures tell a good story.
