7 Ingredient Roast Fish

Ingredients
  • 2 medium sized croaker fish
  • 3 tbsp canola oil
  • 2 tsp salt
  • 2 tsp black pepper
  • 2 tsp red pepper
  • 1 tsp garlic
  • A handful of cleaned fresh parsley
  • A medium sized shallot - thinly sliced
Instructions
  1. Heat oven to 350 degrees.
  2. Prepare a roast pan by covering the pan with foil or parchment paper.
  3. Prepare a rub by add the oil and spices into a bowl and combine well.
  4. Clean the fish, remove the gut and dry the fish using a paper towel.
  5. Place the fish in the prepared roast pans.
  6. Rub the oily rub all over the fish including the insides.
  7. Stuff the insides with the shallot and parsley.
  8. Place fish in the oven and cook for about 20 mins or until fish has reached an internal temperature of 145 degrees.
  9. Remove Fish from oven and enjoy.
