Ingredients
- 2 medium sized croaker fish
- 3 tbsp canola oil
- 2 tsp salt
- 2 tsp black pepper
- 2 tsp red pepper
- 1 tsp garlic
- A handful of cleaned fresh parsley
- A medium sized shallot - thinly sliced
Instructions
- Heat oven to 350 degrees.
- Prepare a roast pan by covering the pan with foil or parchment paper.
- Prepare a rub by add the oil and spices into a bowl and combine well.
- Clean the fish, remove the gut and dry the fish using a paper towel.
- Place the fish in the prepared roast pans.
- Rub the oily rub all over the fish including the insides.
- Stuff the insides with the shallot and parsley.
- Place fish in the oven and cook for about 20 mins or until fish has reached an internal temperature of 145 degrees.
- Remove Fish from oven and enjoy.
Enjoy with any starch of your choice or by itself!
