Vegetable Fried Rice

Loved this dish. Chuck full of fresh veggies, spices that awaken your senses, and fresh shrimps.

Vegetable Fried Rice

Ingredients
  • 2 cups of cooked basmati rice
  • 3 cups of thinly sliced cabbage
  • 2 cups of diced carrots
  • 1 cup of chopped brocolli
  • 1 large red onion thinly sliced
  • 1 cup of chopped fresh shrimps
  • 1 habanero pepper (chopped)
  • 1 tsp coriander
  • 2 tsp curry
  • 2 tsp thyme
  • 1 tsp salt
  • 1 tsp powdered garlic
  • 1 tsp powdered ginger
  • 1 stock cube
  • 3 tbsp canola oil
Instructions
  1. Heat the oil in a wide nonstick pan.
  2. Add the onions and pepper.
  3. Stir and cook for about 3 - 5 mins until the onions turn transluscent.
  4. Add the carrots and spices, stir and cook for 2 mins.
  5. Add the cabbage, broccoli and shrimps.
  6. Stir to combine and leave to cook for about 5 mins.
  7. Taste for salt and adjust as necessary
  8. Add the rice, and stir well to combine.
  9. cook for additional 2 mins. Leave to cool and enjoy!
