Happy Sunday! Today’s recipe is a getaway from the traditional Sunday rice and stew.
This pilaf is not quite Nigerian fried rice, but has some of its elements.
Start off with parboiled long grain rice, and cook according to the directions on the box/pack, then add whatever spices, herbs and veggies you have in the house.
We used 1 cup of rice, and added some thyme, oil, curry, and a stock cube to the boiling rice. Just before the rice cooked, we added chopped green bell peppers, chopped scallions, grilled corn, chopped scotch bonnet pepper, chopped basil and chopped parsley.
We combined all the ingredients by stirring, and then let in simmer for about 5 minutes.
This my friends was the result.
We had it with homemade Suya, and fried tilapia steaks….
