Ginger Plantain Fritters

Holidays are some of the best times of the year for me. On Christmas morning, mummy always made special breakfasts. Everything from decadent french toasts to plantain fritters.

I have many wonderful memories of christmas morning that include these fritters :), Thanks to my sweet Mother. These fritters are a great christmas morning breakfast, and wonderful appetizer for your guests as they await that christmas dinner roast.

Mummy usually made plantain fritters with fresh red onions. It gave it a rich sweet underlying note. This morning i was too lazy to cut up onions so ginger was used instead. It tasted really good. I will make it again.

The ginger and nutmeg in these fritters are evocative of the season. The fritters are fragrant, slightly sweet, pillowy soft, fluffy and totally delicious.

Plantain Fritters

Ingredients
  • 2 medium sized overripe plantains
  • 1.5 cup all purpose flour (sifted)
  • 2 large eggs
  • ½ tsp salt
  • ½ tsp hot red pepper
  • ½ tsp nutmeg
  • 1 tsp baking powder
  • 2 tsp freshly crushed ginger
  • Oil for frying
Instructions
  1. Heat frying oil in a deep frying pan.
  2. Blend the plantain, and eggs until smooth.
  3. Pour the blend into a bowl.
  4. Add all the other ingredients into a bowl and mix until smooth.
  5. Test the temperature of the oil by adding a scoop of fritter batter to the oil. Fritter should bob to the surface when oil is ready.
  6. Using a small ice-cream scoop or table spoon, scoop fritter batter into the frying oil.
  7. Flip frying fritters after about 3 minutes to brown all sides.
  8. Fritter is ready when both sides are golden brown.
