How was thanksgiving? Mine was awesome. It is always great spending time with family. Thanksgiving season in my family is a time for triple celebration. Thanksgiving kicks off birthday season in my family. So after “filling up” at thanksgiving, we get to eat cake days after celebrating birthdays.
This year i have so much to be thankful for. I am most thankful for life, love, and Christ.
My sister and her sweetheart – Prof hosted thanksgiving this year. They made everything except the jollof rice and moinmoin which came from our kitchen. The table was impressive. We had crispy shrimps, and deviled eggs for appetizers, spritzers as drinks, the ultra delicious turkey with a crispy skin, and a number of sides including asparagus, fried rice, carrots, jollof and moinmoin. They was so much left over, i knew they would be… so i came armed with 3 take-out plates. One week later, some left over turkey was still in the fridge, so i used it to make this easy peazy sauce that can be enjoyed with anything. Rice, beans, yams, sweet potatoes, and even plantain.
Most of the flavors of the sauce is derived from the onions. A whole medium red onion was used in this recipe, and the sweetness came through.
- 1 medium red onion (chopped)
- 1 cup left over roast turkey
- 5 cups baby spinach
- 4 large roma tomatoes (chopped)
- 3 tbsp canola oil
- 1 tsp curry
- 1 tsp thyme
- 1 tsp salt
- 1 tsp black pepper
- Heat the oil in a pot.
- Add the onions into the oil and cook for about 5 mins while stirring continuously.
- Add the tomatoes, stir and cook for about 10 minutes while stirring.
- Add salt, pepper, curry, and thyme, stir, and cook for 5 minutes.
- Add the spinach.
- Stir to combine.
- Cook for 1 minute or until spinach wilts.
- Turn off heat and serve.
We started off enjoying the sauce with fried plantains, but boiled yam came calling, and then boiled eggs, and then lunch magically happened.
