Have you started thinking about your thanksgiving menu? These savory hand pies are the perfect meal starters. The chicken can be substituted for smoked turkey, minced goat and even tofu.
Make the crust a day ahead and refrigerate for a better texture. The ingredients for the crust are:
2 sticks of unsalted butter (room temperature)
4 cups of all purpose flour
1 cup of water (room temperature)
The filling is a medley of very interesting flavors. It was tasty, but next time i will play around with bolder flavors like sage, and bay leaves for a fuller body. I will also crisp the onions first, just for that additional layer of texture.
Chicken & Apple Hand Pie Filling

Ingredients
- 1 skinless boneless breast (chopped into tiny pieces)
- 1 yellow apple (use granny smith for texture and tart taste)
- ½ of a medium sized onion (chopped)
- 2 chilli peppers (chopped)
- 2 tsp crushed ginger
- 2 tbsp thyme
- 1 tsp salt
- 5 stalks of fennel (chopped)
- ½ bunch of curly parsley (chopped)
- 1 tsp crushed garlic
- 2 tbsp canola oil
Instructions
- Add all ingredients into a pot and cook while stirring.
- Cook for 10 minutes.
- Turn of heat and leave to cool for 20 minutes before use as filling.
To assemble:
- Bring refrigerated dough to room temperature.
- Roll dough on a floured surface and cut out 4 inch circle using a 4inch pie/cookie cutter.
- Fill half of the circles with about 1 tbsp of filling. (this means that if you have 12 circles, fill only 6 of the 12)
- Use the other half of the circles to cover the filled halves.
- Then seal the edges of the pies using a fork.
- Brush the pies with a beaten egg.
- Bake in a 350 degree oven for about 20 minutes or until pies look golden.
- Cool hand pies for about 30 minutes.
- Then coat with melted butter.
Sprinkle your favorite flavor of FalkSalt.
