The folks in your household that are shoveling and trying to create a path in the aftermath of storm Jonas, deserve this quick-bread. Is is super easy, and quick to whip up.
We made it to encourage C that is still hard at work shoveling, thanks to the Jonas.
This bread is ridiculously easy to make. The most difficult part was probably chopping up the apples.
The magic of the bread is the brown butter, OMG the flavors are intense, memorable and just close-your-eyes-delicious.
Cooking the apples in the brown butter first mellowed the apple flavor a bit, but the result was a soft, almost creamy baked apple texture.
The infusion of ginger, pumpkin spice and cinnamon made the house smell like a fancy home store in fall.
- 1 tsp ground ginger
- 1 tsp ground cinnamon
- 1 tsp pumpkin pie spice
- 3 tbsp blackstrap molasses
- ⅔ cup sugar
- 1 stick + 2 tbsp butter
- 2 eggs
- 1½ teaspoons vanilla extract
- 1½ cups all-purpose flour
- 1¾ teaspoons baking powder
- ½ cup cold unsweetened vanilla almond milk
- 2 apples, peeled and chopped (I used Fuji)
- Preheat oven to 350 degrees. Grease your cake pans.
- Heat a pan and add 1 stick of butter
- Cook butter for about 2 mins while stirring continuously until the butter is browned.
- Add the apples and cook for about 1 minute until apple is slightly softened
- Add the ginger and spices to the cooking apples, and stir to combine.
- Turn of heat, and transfer the contents of the pan to a bowl.
- Add the 2 tbsp butter, and leave the contents to cool for about 10 mins.
- Add the cold milk, molasses, sugar, vanilla, and mix well.
- Add the eggs combine properly.
- Add the flour and baking powder and combine well.
- Pour batter in the prepared cake pans.
- Bake in the preheated oven until a toothpick inserted in the center of the loaf comes out clean, it should take about 30 to 35 minutes.
- Remove the loaves from the oven, allow to cool and enjoy.
Love love this bread. I am definitely bookmarking it for the future, and you should too. It is always such a good feeling when kitchen experiments turn out delicious.
We served ours with a sweetened cream. Stay warm!
