This bread though… Successful kitchen experiment. Will be my go-to bread moving forward. With less than 7 pronounceable ingredients, This bread is a winner!

Plantain Yeast Bread

Ingredients
- 3 ripe plantains
- 1 heaping tbsp yeast
- ¼ cup water
- ¼ cup canola oil
- 2 eggs
- 11/4 cup dry oats
Instructions
- Blend the dry oats until it becomes a smooth powder
- Pour oats in bowl
- Peel the plantains, chop and put into a food processor
- Add the water, eggs, oil and water and blend until velvety smooth
- Pour plantain blend into the bowl of dry oats
- Add yeast and mix thoroughly.
- Spray a loaf pan with oil.
- Pour the plantain oat mix into the loaf pan and leave to rise for about 30 minutes or until it doubles in size.
- Bake in a 350 degree oven for about 45 minutes or until and inserted toothpick comes out clean.
- Cool and serve as you will regular bread.
Nice and interesting. I long to try plantains in baked goods but…haven’t yet. I like the fact that it’s a yeast not quick bread
It tasted great, a little sour and crumbly. It is something i will make again.

I am ginger to use the base of your recipe but I will use boiled green plantains and coconut flour and maybe small amount of almost d meal. Green plantains are natualling resistant starch. It does not digest in your small intestines but does in the LG intestines. That mean no sugar spike, good for Diabetics, gi disorders and people who watching weight. I have been looking for plantain bread recipe all day and your way seems hopeful I will have to reduce the liquid though because of the boil plantains. If this work I will have it on my website and give you credit for making this version that I will modify. Thanks
