We had some goat meat pepper soup left overs from the weekend, and had gotten bored from eating the same soup.
Lunchtime came around today, and we “re-awakened” the soup by adding some baby spinach and palm oil.
Because of the yam cubes in the pepper soup, this reawakened version was thick and “creamy”.
We really enjoyed it.
It is a lovely way to use up left-overs.
Peppersoup Leftovers

Ingredients
- 2 cups cold goat meat pepper-soup (made with yam cubes)
- 1 tbsp palm-oil
- 3 cups baby spinach
Instructions
- Put the soup in a pot and set on a stove.
- Add the oil.
- Cook for about 3 mins or until soup begins to bubble.
- Add the spinach.
- Stir to combine.
- Cook for 1 minute.
- Turn off heat.
- Enjoy

yum! thanks for the tip. i had some leftover cow foot pepper soup and had no idea what to do with it. now i know! thanks
