Today felt like an Asun type of day. I was hungry, tired, and did not have the time nor patience to go through all the Asun steps. Thankfully this short cut version satisfied that craving and performed excellently on taste and smell 🙂
Ingredients:
- Goat Meat
- 3 large red bell pepper
- 1/2 large red onion
- 1 scotch bonnet pepper
- Knorr cubes
- Ginger powder
- Garlic Powder
- Bay leaves
- Salt
- Vegetable oil
Method
- Boil the meat with water, bay leaves, ginger, garlic, salt and 2 knorr cubes for about 45 mins or until soft.
- Transfer the meat to a pan and heat the pan on the stove top until the meat is slightly browned
- Now add a little oil, about 3 tbsp or just enough to cook the pepper
- Add the peppers, onions, more ginger, garlic, and salt
- Stir and leave to cook until onions is transparent, and peppers still have a crunchy bite
- Enjoy with rice, plantain, or any starch you have
